警惕沙氏菌!家教你分生熟食,食物中毒

沙氏菌是常致食物中毒的病原菌之一,在潮炎的境下,特容易孳生,感染的食物泛,常出於蛋、乳品、肉等物性品及其品,也存在於受染的生蔬果、合理食品及加工食品,如美乃滋、沙拉、提拉米,都是沙氏菌高食品。

庚院床毒物中心主任暨科系教授主治、庚大中系床教授宗海表示,沙氏菌毒性相,病伏期6~72小,多食物中毒者出急性胃炎,常症有心、吐、腹、血便、及痛等,大持4~7天;、老年人及免疫力低下者的症,可能重,甚至可能引菌血症、血症,造成生命危。

教授小提醒:

生食或熟食未底加後食用,就可能生沙氏菌食物中毒,建料理生食材,如、肉或蛋的前後洗手,理生熟食要分,至少3砧,分理生食、熟食及水果,可避免交叉感染。
