想用的食材,煮出手切肉的味道,用肥瘦均的五花肉、好的黑豆油、酥和白胡椒粉及五香粉,慢煮至入味,用搭配白,真的香四溢,人心意足的美食。


食材



  • 皮五花肉, 800克

  • 酥, 50克

  • 水煮土蛋, 10

  • 味料

    • , 少

    • 冰糖, 15克

    • 棕糖或二砂, 2茶匙

    • 黑豆油, 2米杯

    • 米酒, 1米杯

    • 白胡椒粉, 1茶匙

    • 五香粉, 少





料理步

步 1:肥瘦均的皮五花肉,洗擦乾,把骨的部位切除做它用,剩下的五花肉切片後切小;

步 2:把切小的五花肉放入不加油的炒,用中大火慢炒;

步 3:炒到出水後,煎炒;

步 4:炒到水份全部消失,加少的巴持拌炒,肉能出更多的水;

步 5:炒到肉上色,有香,加入冰糖和糖拌炒;

步 6:炒到糖融後 加入白胡椒粉和五香粉;

步 7:加入油和米酒,煮到汁冒泡泡;

步 8:倒入酥拌炒均;

步 9:肉倒入砂中;

步 10:加水淹食材,大火煮小火,煮1小,火到降,再次火,用小火煮;

步 11:煮到汁稠,吃汁做微,如果煮水份有蒸太多,量的加水;

步 12:加入水煮蛋煮後,火放到降,放冰箱一晚;

步 13:隔天再煮,就可以享用了。
