【早安健康部】近日有友提，有些餐使肉口感嫩，使用小打肉，心吃了是否危害健康。福部食署此在食提出回，使用量「食品」小打粉，的可肉中的蛋白生反，使肉保水度增加，只要不量，吃下肚是的，且多餐和家庭仍不常使用小打粉，食署明全文如下：
小打粉能肉？
有些餐使用小打使肉嫩，於人有危害，是真的？
碳酸（NaHCO3）俗小打、打粉、焙用，易溶於水的白色粉末，加或遇酸性物生二氧化碳，碳酸水溶液呈弱性，常用於中式料理、烘焙品、境清、、工程等，使用辨清楚是「食品用」或「工用」小打粉。
- 食品用小打：常用於烹烘焙、清食用杯碗等。
- 工用小打：用拖地、洗衣、清水管等；格便宜。
小打可肉中的蛋白生反，使之疏，使肉的保水度增加，到肉嫩的目的，但若添加量，生味而影品。
目前大多改以水果酵素，如：木瓜、梨、檬、果、奇果等，或以外力敲打，切肉品，使肉得嫩、易入口，亦能搭配蛋白、太白粉等使肉品保持水分。
